Special Recipe of the Month!


  • 1 block of tofu, pressed and sliced into strips
  • 4 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1 avocado, diced
  • 1/4 red onion, thinly sliced
  • 1/4 cup crumbled feta cheese (optional, omit for vegan version)
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste


  1. Preheat your grill to medium-high heat.
  2. Season the tofu strips with salt and pepper. Grill the tofu for about 3-4 minutes per side, or until lightly charred. Let it cool for a few minutes, then cut it into bite-sized pieces.
  3. In a large bowl, combine the salad greens, cherry tomatoes, cucumber, avocado, red onion, and feta cheese (if using).
  4. In a separate small bowl, whisk together the olive oil, lemon juice, salt, and pepper to make the dressing.
  5. Add the grilled tofu to the salad and drizzle the dressing over the top.
  6. Toss everything together gently until well combined.
  7. Serve the vegetarian grilled tofu salad immediately and enjoy!
